Located in the front portion of the dorsal region, limited in the cranial area by the neck, in the caudal area by the fore ribs and ventrally by the corresponding portion of the rib cage (plate). It is the cut immediately after the neck. Commonly known as roast beef, excellent for minced meat, small grilled steaks or cooked in a griddle. Very tasty.
